CLASS PROGRAM:

  • Evaluation of fruit. Lab equipment for small batch fruit processing. Operation and details. Near Infrared Spectroscopy – equipment and process overview.
  • Chemistry in the lab: determining Free Fatty Acids and Peroxide value with quantitative methods.
  • Sensory evaluation of olive oil at the mill and practical on-site applications

    This class does not allow for refunds and will not be cancelled. In the event of a new health advisory, public safety restrictions or other unforeseen reason that may cancel in-person classes at UC Davis, we will conduct the class virtually with registered participants online via Zoom.
