Evaluation of fruit. Lab equipment for small batch fruit processing. Operation and details. Near Infrared Spectroscopy – equipment and process overview.

Chemistry in the lab: determining Free Fatty Acids and Peroxide value with quantitative methods.

Sensory evaluation of olive oil at the mill and practical on-site applications
