Olio Nuovo Festival 2024
The UC Davis Olive Center in collaboration Séka Hills and the Yocha Dehe Wintun Nation, has created the 2024 limited edition Olio Nuovo from the UC Davis Wolfskill Experimental Orchard and the plantings at the blue hills tribal land in the Capay Valley. In conjunction with this year's UC Davis Olive Center Olio Nuovo Festival, the Center is offering two short, in-person classes on the “Grow Olive Trees in your Garden: Basics of Planting and Care” and “Olive Oil Appreciation: How to Select and Enjoy it” at the Good Life Garden and at the Sensory theater located at the Robert Mondavi Institute for Wine and Food Science with the support of Novavine Olive Nursery. Come and learn basics of growing olive trees, what makes and olive oil great, and taste our freshest extra virgin olive oil, that is now becoming a yearly tradition!
12:00 – 3:00 PM Olio Nuovo Release, Tasting and Sale of our Current Oil Selection with our Students
For the purchase of two or more Olio Nuovo bottles, you can take home an olive tree courtesy of Novavine (until supplies last).
Join the Center’s “Olea Learn Apprenticeship Program” students at the Robert Mondavi Institute to learn about our existing selection of olive oils from the Wolfskill Experimental Orchard. You will be able to taste our extra virgin olive oil (Olio Nuovo, Gunrock and Wolfskill), and the Fresh Garlic olive oil, and learn about quality and oil characteristic from our very own students. All the oils will be available for purchase.

12:30 – 1:30 PM Grow Olive Trees in your Garden: Basics of Planting and Care Class
Join the Olive Center Executive Director Javier Fernandez Salvador and the Olea Learn students on this short class directed at the public and new olive oil enthusiast.
The class will include:
• Choosing your site and location
• Variety selection for table and oil production
• Planting and caring for young trees
• Basic tree fertility and irrigation
• Establishment pruning and tree care
This event is free and open to the public.

2:00 – 3:00 PM Olive Oil Appreciation class

• Myths and realities of Olive Oil
• What you need to know to cook with Olive Oil
