UC Davis Olive Center Olio Nuovo Festival 2022
The UC Davis Olive Center in collaboration with the students in our "Olea Learn Apprenticeship Program", has created the 2022 limited edition Olio Nuovo from UC Davis Wolfskill Experimental Orchard.
In conjunction with this year's UC Davis Olive Center Olio Nuovo Festival, the Center is offering two short, in-person classes on the “Olive Trees in your Garden: Basics of Planting and Care” and “Olive Oil Appreciation: How to Select and Enjoy it” at the sensory theater located at the Robert Mondavi Institute for Wine and Food Science with the support of Novavine Olive Nursery. Come and learn basics of growing olive trees, what makes and olive oil great, and taste our freshest extra virgin olive oil, that is now becoming a yearly tradition! For the purchase of three or more Olio Nuovo bottles, you can take home an Olive Tree courtesy of Novavine.
Olio Nuovo Festival Activities
Tasting and Sale of our Current Oil Selection with our Students:
Join the Center’s “Olea Learn Apprenticeship Program” students at the Downtown UC Davis Store to learn about our existing selection of olive oils from the Wolfskill Experimental Orchard. You will be able to taste our extra virgin olive oil (Gunrock or Wolfskill Reserve), and the Roasted Garlic olive oil, and learn about quality and oil characteristic from our very own students. Our Olio Nuovo will also be available for purchase.
Olio Nuovo Release, Tasting and Food Pairing:
Our students will be preparing some surprise food pairings for all attendees to enjoy and combine with this years new release in addition to selling and making our Olio Nuovo Available to the public. For the purchase of three or more Olio Nuovo bottles, you can take home an Olive Tree courtesy of Novavine.

Olive Oil Classes:
Join the Olive Center Executive Director Javier Fernandez Salvador and Alexandra Devarenne from Novavine Olive Nursery on these short courses directed at the general public and new olive oil enthusiast.
“Olive Trees in your Garden: Basics of Planting and Care” class will include:
• Choosing your site and location
• Variety selection for table and oil production
• Planting and caring for young trees
• Basic tree fertility and irrigation
• Establishment pruning and tree care
“Olive Oil Appreciation: How to Select and Enjoy it” class will include:
• What is Extra Virgin Olive Oil and how it is made
• Myths and realities of Olive Oil
• What you need to know to cook with Olive Oil
Registration: $20/person on this site for both classes. Due to our classroom space, we are limiting the spaces available. Register as soon as possible to secure your spot.
